White Wines

Our white wines express the love for a different way of producing wine, more respectful of nature, which brings to life the art of the Benedictine monks who once lived in this Abbey . 

The grapes of our white wines, Chardonnay IGT Cantorio and Pinot Grigio DOC delle Venezie Capitolo, germinate early and are harvested in the first weeks of September, to ensure that the berries retain the right acidity. The vinification is in classic white. Fermentation takes place at a controlled temperature by means of selected yeasts with vinification in steel.
